This interesting looking knife is the washed off gourmet 10 inch super slicers. And the point of this is to be a slicing knife but to be a slicing knife on steroids. It cuts through not only meets but also larger vegetables like let’s say a squash. And also fruits like let’s say a watermelon the way. That is by having sort of reverse serrations on. It instead of having concave serrations. It has convex serrations so. It acts almost like a hundred little tiny straight edge knives going through the meat. Or the fruit or the vegetable. It a lot and the interesting thing to note is the fact. This is an entry-level knife by washed off its part of their gourmet line so it’s going to be a little bit different. Than their other knives. It is a stamped knife. It is a machine made. Though it’s made of the same metal a58 hardness metal. It is cut to a slightly. Duller eighteen and a half degree angle that’s. Something you want to consider on top of. That the actual handle material is similar. What I like the most is an. Though its entry-level.
It does have a nice hearty full tang. And the final thing. Ilike is it does come with a lifetime warranty. Though it’s an entry-level knife so. You like German style knives. While the classic is their standard knife set there’s a big difference between the two knives. They start out with the same metal 58 hardness but the classic is forged in handmade. While the gourmet is stamped in machine-made so the end result is the classic is gonna be much. More resilient of a blade. Than the gourmet will at the same time. That cutting angles are very different the classic is a very sharp 14 degrees. While the gourmet is actually a very dull 18. And a half degrees the next thing to discuss is the actual bolster. And the handle since the classic is in fact forged. It has a very nice and thick bolster here. That the gourmet does not have. That does is aid in the rigidity of the blade between the tang. And the actual knife since the gourmet doesn’t have. It ends up just being one solid piece that’s actually relatively flexible. Something you want to consider. Both have full tangs the tang of the classic is obviously thicker. And heavier and the next thing I actually wanna discuss is the handles. They look very similar. You first look at them but the materials are very different the classic has a very smooth very high-quality handle. You can feel they just feel soft. And nice while the handle of the actual gourmet line feels very cheap. When you’re touching it almost like a dollar store knife. You would purchase and I’m not a fan of.
That at the end of the day. Both have lifetime warranties but. Ireally think that for the price the gourmet is there are so. Many better knives out there. Iespecially think if you’re gonna pay. That much you should. Either get a shun Sora which is gonna be probably a little bit cheaper. And much better made knife. Or just pay the little bit extra to purchase the classic. This video I want to compare. And contrast the wusthof gourmet boning knife to the wusthof ikon boning knife the icon is their flagship. While the gourmet is their entry-level line so. It makes sense that we’re going to have a lot of differences here off the bat the knives. Both start out with relatively similar metal 58 hardness the difference is the gourmet is stamped in machine made. While the icon is forged in handmade so the forged blade of the icon ends up being a lot. More resilient the second biggest difference in terms of the blade is the actual cutting edge the cutting edge of the icon is a very sharp 14 degree angles well the cutting edge of the gourmet is a relatively dull 18. And a half degree angle. That in perspective. Ican use the icon to shave. All the hairs off my arm in. One pass both the gourmet no matter. Many times I try I’m not going to be able to cut hairs on my arm the actual rigidity of the blade is. Another thing I want to mention the icon is forged so. This very thick tang. And a very thick bolster. And because of that the actual blade ends up being fairly rigid in contrast the stamped gourmet is very flexible because of. That lack of a bolster the handle those. Where the most obvious differences are the handle of the icon has been designed to be the. Most ergonomic handle. They can make that’s not to say the classic design of the gourmet is not comfortable it’s actually very comfortable it’s just not the.
Most comfortable knife you’re going to be using the icon does two things the first is the unique shape of the handle makes. It really feels like part of your hand no matter. You hold and the second is. This very thick tang. This mass right at the bottom sort of fall into your hand. And make it feel like an extension of your entire arm. This video boning knife as well as the washed off gourmet five-inch boning knife. These guys are a little bit of a different price range but I’ve actually gotten. Some interest in these videos so. Ithought I would make them regardless off the bat the point of a boning knife is two things number. One to remove bones for pieces of meat a number two to break those larger pieces of meat down to their. Smaller manageable cuts. And personally I love the shape. And design of because at the end of the day. It has really low drag. It gives you a lot of sorts of dexterity. And control over where you’re cutting so you’re not wasting any meat. And you’re not causing any problems. Either way with that said obviously since. These two knives are in a slightly different price range. They are going to be very different knives. They soon is a forged. And handmade knife made in japan. They washed off is a stamped machine-made knife made in germany on top of. That the actual cutting edges are very different the washed off is a relatively dull. Iwould say 18 and a half degree blade. While the shoot is an extremely sharp 16-degree blade to put. That sort of in perspective with. This knife you can literally just shave. All the hairs off your arm in. One motion and with the wood off no matter. Many times you scrape. It against your arm you’re not going to cut. Any hair is off so that just really shows. How sharp this is in comparison to. That with that said the actual blade materials are much different to the shoe uses VG max steel which is a notch better.
Than vg-10 the gold standard the knife making world right. Now it’s very hard very resilient holds an edge extremely well 61 hardness. And the worst off uses their own proprietary blend which is only a 58 hardness so it’s much sharper the end result is. That essentially this knife is going to dull much faster it’s going to need was. More maintenance because of. That in terms of honing and sharpening so it’s really just. Something you want to consider on top of. That the wusthof is just a piece of steel so. It is a very classical knife. While the shewn has 34 layers on. Either side of stainless steel worked into the blade which does two things number. This gorgeous Damascus design but number two. You also get a lot of resistance to stains. And rust and pinning and things like.
That since this is a forged blade. It actually makes it a little bit. More ergonomic you have. This recessed area on. Either side that fits your fingers are very nicely. It also has a d-shaped pack of wood handle. That fits into your palm very nicely so. It really does feel like an extension of your hand. And Packwood to be clear as a compressed resin filled wood so it’s very durable. It stands up to water damage. And things like that very well on the other hand the wusthof has a plastic handle obviously but. They are both full tang which is nice and. Both do have full warranties lifetime warranties which is very nice the shewn.
Something I really love about. It also comes with lifetime of sharpening for free. And the reason I think that’s great is. Because with high-end knives. You take them to a good reputable sharpener it’s going to cost. You about five dollars an inch to sharpen them which means. These knives would cost roughly twenty-five to thirty dollars at a minimum just to get an edge back on. Even then you don’t really know. What results are going to get with the shooting you give it to shoe. They look at if they see. Any problems they throw. And give you a new. One but otherwise you can rest easy knowing they’re going to put the exact same magic back on the knife as. When your first purchase. And fell in love with.
